Cuisine in the Cackalack

I was born in NC, went to college here, spent almost two decades in NYC & LA, and recently returned back to the flowering dogwood state. Have a whole diatribe about North Carolina's (the Triangle in particular) proliferation of mid Italian, fake elite Boomer "good", and we'll call it "American New" with a patina of private equity. What's far more interesting is the exciting new range of cuisines, particularly from the South Asian diaspora; while paying homage to familiar favorites, and staying on the hunt for Liz Lemon's perfect food: the sandwich.
